Chicken Paprika with Sour Cream Gravy

Add onion powder, salt and paprika in a bowl and mix.
Add chicken thighs in the mixture and season it well.
Place chicken on a baking sheet and place in oven to bake at 400° F for 40 minutes.
Take out the chicken and separate the liquids/juices in a bowl, add sour cream in the juice and whisk until it gets smooth.
Serve roasted thighs with sour cream gravy.

Paillard of Chicken with Lemon
Serving: 6 Total Time: 140 mins Calories: 240 Fats: 12 gm Carbs: 1 gm Proteins: 32 gm
Rosemary springs (leaves chopped)
Sage leaves (shredded)
Spread cling films on surface. Now place chicken breasts on it and cover with another sheet of cling film.
Bash the chicken using meat mallet until the thickness remains about 0.5 cm. Place the chicken in a dish.
For marinade: Crush garlic with salt. Add sage, rosemary and mix thoroughly. Add lemon zest, juice, oil, pepper and stir to combine. Add the mixture over the chicken, coat it well and refrigerate for 2 hours
Heat coals well and barbecue chicken for 1-2 mins per side. Take out and place on board when done.
Combine oil, vinegar in a bowl; add rocket and a little seasoning with a toss. Shave parmesan.
Serve chicken with salad and some lemon wedges.

Chicken breasts (skinless & boneless)
Black pepper (ground)
Red wine (dried)/water
Place chicken breasts in between the cling sheet and bash with a meat mallet until the thickness remains 1/4 inch.
Mix the next 5 ingredients to create a paste. Rub the paste on chicken breasts generously and coat the baking pan with cooking spray. Place the chicken in the pan, and refrigerate for 2-6 hours after sealing the pan.
Drizzle some wine on chicken and place it in oven, preheated to 450° F, for 10-12 minutes. Check if it’s done by inserting the thermometer in the thickest part, if it displays 170° F and no juice is left in it then turn.
When done, take it out from oven and drizzle it with vinegar immediately.
Serve after garnishing with rosemary.

Mexi Baked Chicken

Taco seasoning (without sugar)
Low-fat cheddar cheese (shredded)
Coat your baking pan with cooking spray.
Rub taco seasoning on both sides of chicken and coat well. Add 1 teaspoon of salsa on the top.
Place in preheated oven to 376° F and bake for 45 minutes.
Take out, sprinkle cheese on top and bake again for 5 more minutes until the cheese melts.

Mix all the ingredients of meatball. When the sticky mixture is made, make balls of around 1 inch.
Place these balls on a greased baking pan and bake for 10 minutes at 350° F.

Serve with celery sticks.

Basil and Tomato Chicken Skillet
Serving: 4 Total Time: 30 min Calories: 170 Fats: 2 gm Carbs: 7 gm Proteins: 30 gm
Chicken breast tenderloins
1-1 ¼ pounds
Black pepper (ground)
Tomatoes, diced and drained
1 14 ½-ounce can
Parmesan cheese (shredded)
Cut the chicken pieces lengthwise in halves.
Coat pan with cooking spray.
Add chicken in pan and cook for 5 minutes or until cooked.
Sprinkle salt and pepper on top.
Place again on heat, add tomatoes and basil and remove from heat.
Add spinach with fine toss.
Serve with sprinkled cheese on top.
